Zucchini Brownies

Nutrients:

  • Folates (v) are important in cell division and DNA synthesis (particularly important for pregnancy)

  • Potassium (v) great for electrolyte rebalancing

  • Iron, manganese, phosphorus, and zinc (M)

Benefits:

  • Low in calories (approximately 17 food calories per 100 g fresh zucchini) Often used by dietitians for weight loss and cholesterol control.

  • Reduces blood pressure by countering the effects of sodium

  • The skin is good source of dietary fiber but wash thoroughly and caution cucurbitacins (Natural toxic film that can develop when grown under stress or cross cultured with varied gourds)

Recipe:

Zucchini Brownies

Ingredients

  • 1 cup almond butter

  • 1 1/2 cup grated zucchini

  • 1/3 cup raw honey

  • 1 egg

  • 1 tsp vanilla

  • 1 tsp baking soda

  • i tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp allspice

  • 1 cup dark chocolate chunks

Directions

  • Mix ingredients Bake at 350 for 25-30min in 9x9 baking pan or 30-35 in an 8x8 pan
